Everyone loves pizza. This is a fact.

 Whether it’s homemade Greek yogurt gluten free mac and cheese , Pizza Low Carb Lasagna with Zucchini Noodles or just traditional pizza (maybe on a sweet potato pizza crust?) It’s just one of those things that you need to be a crazy person to not like. How can you go wrong with bread, ooey gooey cheese, and saucy goodness? You just can’t.

This got my crazy little brain thinking about what would happen when you combine 2 amazing comfort foods, and so healthy pizza lettuce wraps was born.

These yummy little lettuce wraps take away the carbiness of pizza, but still maintain the ooey gooey, cheesy sauciness that is really what makes pizza ah-may-zing.

The lettuce cup also give them a little bit of a crisp crunchiness and an Asian flair that makes them so fun to eat that you don’t even notice it’s not real pizza.

That might be a little bit un-true, but this is a REALLY good substitute for when you have a pizza craving but also wanna be healthy ya know? Read: Every single day of my life.

WHAT LETTUCE IS BEST FOR LOW CARB LETTUCE WRAPS?

Okay, so I know that lettuce is healthy for me, but sometimes it can just get a bit BORING, am I right? That’s why I love to jazz it up to keep it interesting and incorporate it into delicious recipes like LETTUCE WRAP! If you’re a stranger to lettuce wraps, you’re going to be such a fan after you get a load of all my lettuce wrap ideas. I love me some Chicken Larb Gai Lettuce Wraps or some Asian Crockpot Lettuce Wraps and now these pizza themed ones I’m going to show you today! My recipe calls for green cabbage, but butter lettuce or romaine would also work great to make them!

PIZZA KETO LETTUCE WRAPS INGREDIENTS

You are going to love the ingredients list for these wraps because it includes lots of nutritious veggies and proteins but doesn’t skimp on that pizza flavor you love, either! Here’s what you’ll need to round up before you get cooking:

  • Bacon, cooked and diced
  • Olive Oil
  • Yellow onion
  • Green Pepper
  • White Mushrooms
  • Salt
  • Lean Ground Beef
  • Green Cabbage or Butter Lettuce
  • Organic Pizza Sauce
  • Deli Ham, thinly sliced
  • Pepperoni
  • Reduced Fat Mozzarella Cheese

HOW TO MAKE LOW CARB LETTUCE WRAPS

Sautee

Pour about ½ the olive oil into a pan and bring it up to medium high heat. Add the onion and peppers and sautee for about 3 minutes or until softened. Add in the mushrooms and cook another minute or 2, then season the veggies with salt. 

Cook

Bring a medium pan up to medium high heat and then add the ground beef, breaking it up as it cooks. Cook until it is no longer pink, which should take about 5 minutes. 

Assemble

Lay out your lettuce cups of choice and divide the pizza sauce evenly among them. Follow it up with the cooked veggies, beef, bacon, ham, pepperoni and cheese.

FAQ

Can I substitute the cheese for a dairy free option?

If you’re cooking up some lettuce wraps for family or friends who don’t eat dairy, or if you yourself have a sensitivity to it, you can absolutely use your favorite dairy free cheese instead of regular mozzarella.

Can I make the filling ahead of time?

If you want to prepare these lettuce wraps ahead of time, you definitely can! Feel free to cook up the filling and store it in the fridge the day before you serve it. I don’t recommend storing the filling in the fridge for much longer than 1 day.

What can I use other than Beef?

If beef isn’t your jam, or you simply don’t have any on hand, feel free to just use pepperoni and bacon as the protein for these lettuce wraps. If you want to replace the beef with pork or cooked chicken, feel free to do that! I think that cubed chicken cooked in some olive oil with salt would be a delicious addition to these wraps.

INGREDIENTS

  • For the filling:
  • 4 Strips of bacon, cooked and diced.
  • 1/2 Tbsp Olive oil
  • 1/2 a yellow onion, diced
  • 1/2 a Green pepper, diced
  • 1/4 cup White mushrooms, diced
  • Salt to taste
  • 1/2 pound Lean ground beef, (I use 93%)
  • 8 Leaves Green cabagge or butter lettuce. **
  • Toppings:
  • 4 Tbsp Organic Pizza sauce
  • 1/4 Cup Thinly sliced deli ham, diced
  • 8 slices Pepperoni
  • 1/2 Cup Reduced fat Mozzarella cheese, grated

INSTRUCTIONS

  • Put the 1/2 Tbsp olive oil in a large pan and heat on medium-high heat.
  • Add in the peppers and onions  and cook until softened, about 3 min. Add in the mushrooms and cook for another minute or two, until soft. Season with salt.
  • Heat a medium pan on medium/high heat and cook the ground beef until no longer pink inside, breaking it up as it cooks, about 5 minutes.
  • Divide the pizza sauce between the lettuce (or cabbage), followed by the cooked veggies, bacon, beef,  ham, pepperoni and cheese.

NOTES

** I love using green cabbage instead of lettuce. They are stronger and also give an extra crunch! Plus, cabbage has more nutrients than lettuce 🙂
